Strawberry White Chocolate Blondies

How can so much deliciously sweet flavor exist in such a small square? We’re not sure either, but that won’t stop us from having another!

Ingredients

Bars

  • 1 12 sticks (34 cup) salted butter

  • 12 cup Truvia For Baking Brown

  • 2 large eggs

  • tsp vanilla extract

  • 2 cups all-purpose flour

  • 12 tsp baking powder

  • 12 tsp salt

  • 12 cup of strawberry jam or reduced sugar jam

  • 12 cup white chocolate chips

  • 4 sliced fresh strawberries

Icing

  • 1 cup  Truvia® For Baking Icing Sweetener

  • 1 tsp meringue powder

  • 3-4 Tbsp warm water

  • 3-4 Tbsp warm water

  • 1 tsp vanilla extract (optional)

  • 2-3 drops of food color (optional)

Directions

  • 1.

    Preheat oven to 176°C. Line an 8x8 baking dish with parchment paper.

  • 2.

    To a medium pan add butter, heat on medium heat, allowing the butter to brown, it will smell toasted and have dark specs on the bottom when ready.

  • 3.

    Remove the butter from the heat and pour into a large heat safe bowl. Let cool 5 minutes.

  • 4.

    Whisk in the Truvia For Baking Brown, eggs, and vanilla extract into browned butter.

  • 5.

    Next, add the flour, baking powder, and salt, mixing until just combined.

  • 6.

    Add jam and white chocolate chips to the top of the dough.

  • 7.

    Fold jam into the dough creating swirls, don’t overmix. Dough will be thick.

  • 8.

    Press the dough out into the prepared dish.

  • 9.

    Bake for 25-35 minutes, edges will brown. (oven times may vary)

  • 10.

    While bars are baking, mix all icing ingredients in a small bowl, set aside.

  • 11.

    Remove bars from oven, let cool on a wire rack, in pan, don’t be surprised if the blondies have not risen much.

  • 12.

    Evenly sprinkle the fresh strawberries over the dough.

  • 13.

    Spread the glaze all over the bars.

  • 14.

    Cut into 24 pieces and enjoy.

  • 15.

    Store in a sealable container.
