Strawberry White Chocolate Blondies How can so much deliciously sweet flavor exist in such a small square? We’re not sure either, but that won’t stop us from having another! Serving size 24 bars Ingredients Bars1 1⁄2 sticks (3⁄4 cup) salted butter1⁄2 cup Truvia For Baking Brown2 large eggstsp vanilla extract2 cups all-purpose flour1⁄2 tsp baking powder1⁄2 tsp salt1/2 cup of strawberry jam or reduced sugar jam1⁄2 cup white chocolate chips4 sliced fresh strawberriesIcing1 cup Truvia® For Baking Icing Sweetener1 tsp meringue powder3-4 Tbsp warm water3-4 Tbsp warm water1 tsp vanilla extract (optional)2-3 drops of food color (optional) Directions Preheat oven to 176°C. Line an 8x8 baking dish with parchment paper.To a medium pan add butter, heat on medium heat, allowing the butter to brown, it will smell toasted and have dark specs on the bottom when ready.Remove the butter from the heat and pour into a large heat safe bowl. Let cool 5 minutes.Whisk in the Truvia For Baking Brown, eggs, and vanilla extract into browned butter.Next, add the flour, baking powder, and salt, mixing until just combined.Add jam and white chocolate chips to the top of the dough.Fold jam into the dough creating swirls, don’t overmix. Dough will be thick.Press the dough out into the prepared dish.Bake for 25-35 minutes, edges will brown. (oven times may vary)While bars are baking, mix all icing ingredients in a small bowl, set aside.Remove bars from oven, let cool on a wire rack, in pan, don’t be surprised if the blondies have not risen much.Evenly sprinkle the fresh strawberries over the dough.Spread the glaze all over the bars.Cut into 24 pieces and enjoy.Store in a sealable container.
